Lactose is a non fermentable sugar also known as milk sugar and is used to add sweetness to the finished beer. Lactose is a disaccharide sugar derived from galactose and glucose. It is traditionally used when making Sweet Stouts or as they are more commonly known, Milk or Cream Stouts.
Lactose can also be used as a natural sweetener in other beverages such as wine and cider.
