Product Description

Ideally suited for rich, full bodied red wines with exceptional flavour complexity.

Noted for exceptional depth and flavour complexity, R56 exhibits complex aromatics during fermentation conferring an old world quality which one might only expect from natural flora multiple strain fermentations.

Unusually for complex aromatic strains, R56 still respects the varietal character of the fruit and confers good structure and balance. R56 is also a high glycerol producing strain.

R56 is a medium rate fermenter with optimal temperature between 22 to 30°C (72 -86°F) which will ferment to 13.5% abv. ethanol.

    2 Enzymes (Glucoamylase and High Temperature Alpha-amylase)

    A specialist active dried Whiskey distiller’s yeast producing an optimum congener profile for elegant, well-rounded and refined whiskey spirit for oak aging.

    Sufficient for: up to 25 lt
    Alcohol Tolerance: 15% ABV
    Attenuation: 90 – 100% (high)
    Flocculation Rate: Medium

    Application:
    For fermentation of sugar, malt extract, or grain mash for distillation of Whiskey spirit using the Turbo 500 Boiler or Grainfather Brewing System with the Pot Still Alembic Dome Tip and Copper Condenser. For a result with less character, the Turbo 500 Stainless Still Condenser and Turbo 500 Copper Condenser can be used, if the ceramic saddles are removed, instead of using the Pot Still Alembic Dome Top and Copper Condenser.

    Instructions:
    Add Directly to fermentation vessel and leave to ferment at 20-35C ambient air temperature for optimum performance and quality.

    Alcotec 48hr is a high alcohol & temperature tolerant dual function yeast complete with needed nutrients. Yields up to 14% alcohol in just 48 hours, or 20% in 5 days. Still best to ferment out for 5-7 days.

    Note: to reach a 21% alcohol wash, you MUST ferment between 18-24 degrees.

    Yeast used with 6 kg of sugar ferments between 20-35 degrees. Yeast used with 8 kg of sugar ferments between 20-27 degrees.
